Dominic Franks' Viral Onion Tart Inspires New Cookbook Release

In May 2023, British food writer Dominic Franks captivated social media with his innovative upside-down onion tart, a culinary creation that quickly amassed over one million likes and 40 million views on Instagram. This viral success has culminated in the release of his debut cookbook, "Upside Down Cooking," published by Dorling Kindersley in July 2025, which features 85 unique recipes that build on the upside-down concept popularized by the original dish.

Franks designed the onion tart as a savory counterpart to the classic tart tatin. "I’ve always wanted to write a book, but I could see the potential of the ‘upside down’ concept as it was so popular on my social media," he stated. The culinary technique involves layering ingredients in reverse order, flipping the dish before serving, making it a simple and adaptable method for both savory and sweet recipes. The cookbook includes a variety of dishes, such as beetroot, red onion, and feta tarts, as well as an unexpected upside-down samosa, reflecting Franks' multicultural influences from growing up in London.

The 85 recipes encompass a range of inverted treats, including smaller pies and desserts, alongside suggestions for complementary side dishes. Franks aims to create dishes that resonate with everyday cooking, stating, "I am very much an ‘in the moment’ cook, so I don’t spend a lot of time testing recipes. I think this is more realistic to how people cook in their everyday life."

The publication of "Upside Down Cooking" marks a significant milestone for Franks, who notes the influence of renowned chefs and cookbooks on his culinary journey. His work draws inspiration from figures like Delia Smith, Nigella Lawson, Jamie Oliver, and Rick Stein. Priced at ₹2,750, the cookbook is now available online and reflects the growing trend of social media influencing culinary practices and publishing in the food industry.

Looking ahead, Franks is already working on a second book centered around the upside-down theme, indicating the enduring appeal of this cooking method. The fusion of traditional and contemporary cooking embraced in his recipes showcases the versatility of the upside-down technique and its potential to charm both novice and experienced cooks alike. As the culinary landscape continues to evolve, Franks' journey underscores the power of viral content in shaping modern cooking trends and publishing opportunities.
